1. Origin and description

Sichuan Pepper is prepared from the dried ripe fruit husks of plants in the Zanthoxylum genus, members of the Rutaceae family. It is widely cultivated in mountainous areas of China, especially Sichuan, Shaanxi, and Gansu. Related species are also grown in parts of northern Vietnam.

The plant is a small woody tree or shrub, often with thorny branches. Its compound leaves are aromatic when crushed. The small fruits turn reddish brown when mature and split open to reveal glossy black seeds.
